Coconut Based Ice Cream

It’s July. it’s hot and I have a craving for ice cream. I’ve gone through most of my stand- by flavors and started looking for something different. Not Rocky Road, not Chunky Monkey, or plain vanilla.

I searched the net and came across coconut ice cream.  Hmm…I’ve never tasted them.  If you are a vegan the custard has no eggs as in the conventional variety. You’ll need to use the full fat coconut milk with a fat content above 9 or 10% that you can buy in a can. You don’t have to go completely organic with the ingredients. The only thing you’ll need is an ice cream making machine unless you’ve got that old fashioned salt and cranking variety, then I give you permission to eat as much as you made. My machine is somewhere in the basement gathering cob webs.

Here are two recipes you could try:

Three Flavor Variety (You’re choice)

Serves: 10


1 can of full fat coconut milk (13.5 ounces)
3 frozen bananas or ½ cup coconut palm sugar
pinch of sea salt

For Almond Pistachio Flavor: 1 and ½ tsp almond extract,1
vanilla bean seeded or 1 tsp vanilla extract,1/2 cup toasted and
chopped almonds and pistachios

For Mint Chocolate Chip Flavor: 2 tsp peppermint extract, ⅓
cup raw cacao nibs or chocolate chips of your choice

For Cookies & Cream Flavor: 1 tbsp vanilla extract , 10 cocao
einkorn cookies broken into pieces or cookie of your choice


Combine base ingredients in blender and blend until smooth
Add liquid flavorings (extracts) into blender and blend again
Pour mixture into ice cream machine and turn on
Mix for at least 20 mins or until ice cream is formed
Stir in dry ingredients – i.e. nuts, cookies, etc and serve
Best served immediately, if stored in freezer, place back into
ice cream maker to make smooth and creamy again.

Coconut Milk Vanilla Bean Ice Cream


Ice Cream Maker
Blender or bowl and whisk


2 -13.5 Ounce Cans of Coconut Milk
3 – 4 Vanilla Beans
3/4 – 1 Cup Raw Honey
Pinch of Sea Salt


Carefully slice open the vanilla beans and scoop the vanilla out
of the pods. You will need 1 teaspoon of vanilla for this recipes.

Blend or mix coconut milk, vanilla, honey and salt together
until combined. Pour into ice cream maker and freeze
according to ice cream maker’s manufacturer’s instructions.

This recipe makes approximately 1 quart of ice cream.
